Diabetic Friendly Rum and Raisin Ice Cream

Ingredients

  • 45 g raw, unsalted cashews
  • 2 cups full fat milk
  • 2 tsp 100% pure, unsweetened vanilla extract
  • 1 tsp 100% pure Stevia extract powder
  • 2 tbsp white rum you can use rum flavouring if you prefer not to use alcohol
  • 10 g raisins

Instructions

  1. Combine all ingredients in a blender (I use a Vitamix) and blend well until the nuts are very fine and almost invisible.
  2. Pour contents into a container and refrigerate for about four hours or overnight.
  3. Remove mixture from fridge and pour into an ice-cream maker and follow the instructions for use.
  4. Spoon ice-cream into a container and freeze with the lid on for 1 hour before serving.

Recipe Notes

Please note I use 100% Pure Stevia Extract powder for this recipe. If you are using another form of Stevia, or an alternate sweetener, you may need to experiment with the quantity required.
